The Best Microwave Convection Recipes
Microwave ovens have been around for decades, but we’re still learning about their potential. They can be used for more than just reheating food or defrosting frozen dinners—you can make some really tasty treats in your microwave oven! Here are some of my favorite recipes that will help you get started:
Crispy Mushroom Risotto
Mushrooms are a great source of vitamin D and selenium, copper and potassium. They’re also low in calories, fat, sodium and cholesterol.
- Add mushrooms to your risotto before adding the cheese or Parmesan if you want to save time. You can sauté them yourself or use a pre-sautéed variety if you have one on hand (I like Trader Joe’s).
- If you don’t eat mushrooms but still want to make this recipe work for you: leave out half the amount called for in the recipe—you’ll still get plenty of flavor from all those other ingredients!
Microwave Carrot Cake
- 2 tablespoons butter or margarine
- 1 cup sugar
- 3 eggs, beaten
- 2 1/2 cups flour (or 2 cups All-Purpose Flour and 1/2 cup cornstarch)
- 1 teaspoon baking powder
- 1/2 teaspoon salt * *Preheat oven to 350 degrees F. Grease a 9×13 inch pan and set aside. In a large bowl, cream together butter and sugar until light and fluffy.* Beat in eggs one at a time until well combined.* Add flour mixture alternately with sour cream into creamed mixture until just incorporated.* Pour batter into prepared pan bake for 35 minutes or until knife inserted in center comes out clean.* Cool cake on wire rack before serving
Fruity Pavlova
- Meringue
1 egg white, at room temperature
2 teaspoons ground almonds
1/4 teaspoon salt
- Pavlova: 1 cup (225g) caster sugar, 4 tablespoons water, 3 egg whites and 25g butter. Whisk together in a bowl until stiff peaks form; set aside. Heat oven to 180C/350F degrees. Grease 8 individual tartlet tins with melted butter or spray with cooking oil. Combine the meringue ingredients with an electric mixer on medium speed until pale and thickened but still pale pink in colour (8-10 minutes). Divide between the prepared tin(s) and bake for 20 minutes until golden brown (if using paper cases do not allow them to touch each other). Remove from tins onto wire rack over tray then leave cool completely before removing outer paper case(s). Topping: Place all topping ingredients into food processor bowl along with cooked fruits/vegetables you wish to use – make sure everything is chopped finely so that it blends well into one smooth texture! Stir through thoroughly before adding remaining liquid ingredients such as lemon juice etc., stir again just enough so no lumps remain but don’t overdo it as we want ours crunchy enough without being too dry either! Serve immediately garnished generously with extra nuts if desired like walnuts instead of pecans which would work well too; though both options taste great together we think this particular combination works best because there aren’t any seeds involved which could cause some issues down below while eating raw nuts inside out waiting 10-20 minutes after opening package…
Chicken and Broccoli Lo Mein
- 2 tablespoons oil
- 1 pound boneless, skinless chicken breasts (about 4)
- 2 cups broccoli florets
- 3 tablespoons soy sauce or sesame oil
In a 13-inch-by-9-inch glass baking dish or individual ramekins, heat oil in a large skillet over medium heat. Add the chicken breasts and cook until no longer pink in center, about 4 minutes per side (or 5 if you want them to be more cooked). Remove from pan and set aside; keep warm. Add broccoli florets to hot pan; stir often so they don’t brown too much before being cooked through. When all done cooking, add soy sauce/sesame oil mixture to pan with broccoli florets (I used about 1 tablespoon each); toss well until coated evenly on both sides then remove from heat immediately! Serve immediately on top of lo mein noodles with scallions added if desired.
Microwave Beef Stroganoff
In a medium bowl, mix together the beef, onion and garlic. Set aside.
In a small bowl, whisk together the eggs and milk until combined. Add salt and pepper to taste; set aside.
Place 1 tbsp butter in a microwave-safe dish; place it in the microwave on high power for 15 seconds or until melted (don’t worry if it doesn’t look melted). Whisk in flour until smooth; continue whisking while adding the beef mixture to ensure no lumps form. Pour egg mixture over top of beef mixture; stir well with fork until all ingredients are well incorporated into one another
